CHICKEN ROLLS WITH CHEESE, HAM AND PLUMS (OR CUCUMBER)

Chicken rolls are basically an all-time culinary classic. They can be prepared in a myriad of ways. Personally, I prefer them with plums, but this time I opted for the cucumber. Mr Owl preferred the latter version, but it is generally known that owls frequently turn out to be traitors. The preparation of the rolls is a bit time-consuming, but only because of the fact that you have to keep an eye on them while frying. In fact, they are very easy to prepare (indeed!). There is no need to put toothpicks in them, or tie with a string, because they won’t fall apart. Besides, they are undeniably aesthetic.

(the amount of ingredients depends on how many we want to prepare, and their size, of course)
60 dag of chicken breasts, which makes 10 rather small rolls
ca. 3 slices of ham – whichever you like or are currently in possession of
ca. 3 slices of cheese
several dried plums or three pickled cucumbers
coating:
egg, flour, breadcrumbs
salt, pepper and seasoning, e.g. Provence herbs

Cut the chicken breasts onto chops. Add salt and pepper (I also recommend a bit of sweet paprika and some Provence herbs). Put a slice of ham on each cutlet (or a piece of fit, so that it fits onto the breast, of course), a piece of cheese and a plum (or cucumber).
Roll such pieces up, beginning from the end, where the cheese and plum are. Dip them in egg and the coating, i.e. the breadcrumbs mixed with flour, salt, pepper and seasoning (to your own taste).
Fry them on olive oil until they are golden from both sides. So as to makes sure they do not fall apart, I put the rolls on the frying pan with the joining face down because in this way they seal quickly and do not unwrap.
